1. Lemon Spice Honey Cupcakes
- 2 ½ softened and divided sticks butter
- Sugar, 1 ½ cup
- Four eggs
- Two teaspoons lemon zest
- One teaspoon grated ginger
- Lemon juice, ¼ cup
- Three cups flour
- One cup milk
- One teaspoon baking powder
- Cream cheese, four oz.
- Dash salt
- Two teaspoons powdered honey
- Powdered sugar 2 ½ cups
Beat together sugar and 1 ½ butter sticks until fluffy and pale. Mix one egg at the time, ginger, and lemon zest. Combine milk with lemon juice in one measuring cup. In another bowl mix salt, baking powder and flour. Beat into batter wet and dry ingredients alternating between milk and flour, ending and beginning with the mixture of the flour.
NOTE: Add few tablespoons of milk if the batter is too thick. When it is combined well, place it in the cupcake liners and bake for fifteen to eighteen minutes at 350 degrees. You will know when it is done if you insert a toothpick and it comes out clean. In the meantime, beat together powdered sugar, honey, one stick of butter, and crème cheese to prepare to frost.
2. Cookies with Honey
- All-purpose flour, one ¼ cups
- One tsp ground cinnamon
- ¼ tsp pumpkin pie spice or apple
- ¼ tsp ground ginger
- Five tbsp. cubed unsalted butter
- Three tbsp. dried honey
Before you begin preparing this meal, preheat the oven to three hundred and fifty degrees. Use the parchment to line 2 baking sheets. Place the spices and flour into the bowl. Use your fingertips for the butter, to rub it in until the combination resembles breadcrumbs. To form a soft dough, add honey powder and gently mix it. After you have done that, use the plastic foil to cover it and leave it to rest for about thirty minutes or more.
Between two parchment’s sheets roll dough until 1/8 to ¼ inch thick. You can cut the shapes according to your taste and choice. On baking sheets that you have prepared, put the cookies slightly apart. Leave it to rest for about ten minutes. Bake until golden for about ten minutes. After they are done, leave them to cool on baking sheet for five minutes or more. To cool, place them on a wire rack.
3. Honey Herb Chicken
- Cut up broiler chicken, 1 3 to 4 lb
- Freshly ground black pepper, ¼ teaspoon
- Olive oil, ¼ cup
- Powdered honey ½ cup
- Soy sauce, two tablespoons
- Lemon juice, two tablespoons
- ¼ teaspoon oregano
- ½ teaspoon rosemary
- Fresh basil, one tablespoon
- Four to six garlic cloves
- Pepper and salt
- Powdered garlic
Use all the ingredients, leaving the chicken, and combine them in a blender. Spray a casserole dish with non-stick spray or brush with the olive oil. Put the chicken in it and pour over the seasoning mixture. Sprinkle the meat with the garlic powder, pepper, and salt. Bake in a pan until the juices no longer run pink and fork can be inserted with ease, for about an hour at 350 degrees.
Don’t cover it, and baste it with juices frequently. The temperature of the chicken breasts needs to be 155 degrees. After you have removed it from the oven, use the foil to cover the dish tightly and leave it for fifteen minutes. NOTE: If you prefer you can place the baby carrots, onions and potatoes in the same dish and bake it together with the meat.
4. Honey Cake
- Powdered honey, one cup
- One tsp cinnamon
- ½ tsp mace or nutmeg
- ½ tsp ground cloves
- Softened, unsalted butter, ½ cup
- Dark brown sugar, one cup
- Two tsp baking soda
- Five egg yolks
- ½ tsp salt
- Sifted flour, four cups
- 1 ½ tsp baking powder
- Golden raisins, ¾ cup
- Currants, ½ cup
- Chopped pitted dates, 1/3 cup
- Three tbsp. candied chopped orange peel
- Blanched or chopped walnuts, one cup
- Five egg whites and one tbsp. sugar
First, you need to preheat the oven to three hundred and twenty-five degrees. Mix spices and honey in the saucepan and leave to boil. After that leave it to cool. Beat sugar, baking soda, and butter. Slowly add the eggs beating one at the time. Sift baking powder and salt with the flour.
To butter mixture and honey and flour, nuts and fruits. Use the egg whites and lightly fold in. Pour into two eight inches pans that are lined with paper that is buttered. Bake for about two and a half hours. When it is done, leave it to cool and mellow for a couple of days.
